Creamy Thermomix Chocolate Mousse
This rich and silky chocolate mousse is made easily in the Thermomix with just a few simple ingredients. The chocolate is gently melted before being combined with eggs and whipped cream to create a smooth, airy dessert with an intense chocolate flavor.

Instructions
1. Melt the Chocolate
Place the dark chocolate and butter into the Thermomix bowl.
Set: 4 minutes / 50ยฐC / Speed 2
Scrape down the sides of the bowl if necessary.
Continue for another 1โ2 minutes / 50ยฐC / Speed 2 if the chocolate has not completely melted.
Transfer the melted chocolate to a clean bowl and allow it to cool slightly.
2. Whip the Egg Whites
Thoroughly clean and dry the Thermomix bowl.
Insert the butterfly whisk.
Add the egg whites and a pinch of salt.
Set: 3 minutes / Speed 3.5
Gradually add the sugar through the lid during the first minute.
Continue until the egg whites are glossy and form firm peaks.
Transfer the whipped egg whites to a separate bowl and set aside.
3. Whip the Cream
Remove the butterfly whisk, wash and dry the bowl, then reinsert the butterfly whisk.
Add the chilled cream and vanilla extract.
Set: approximately 30โ60 seconds / Speed 3
Watch carefully through the lid and stop as soon as soft peaks form. The exact time depends on the temperature and fat content of the cream.
Do not over-whip.
Transfer the cream to a separate bowl.
4. Combine the Egg Yolks and Chocolate
Remove the butterfly whisk.
Place the egg yolks into the Thermomix bowl.
Add the slightly cooled melted chocolate.
Mix: 20 seconds / Speed 3
Scrape down the sides and mix for another 10 seconds / Speed 3 if necessary.
The mixture should be smooth and glossy.
5. Fold in the Cream
Transfer the chocolate mixture to a large mixing bowl.
Gently fold in the whipped cream in two or three additions.
Use a spatula and a slow folding motion rather than stirring vigorously.
6. Add the Egg Whites
Gently fold the whipped egg whites into the chocolate mixture in several additions.
Take care not to overmix. Keeping as much air as possible in the egg whites gives the mousse its light, fluffy texture.
7. Chill
Divide the mousse among six small serving glasses or dessert bowls.
Cover and refrigerate for at least 2 hours.
