Ingredients

  • 4 ripe bananas, mashed
  • 1 can (20 oz / 567 g) crushed pineapple, undrained
  • 1½ cups (300 g) granulated sugar
  • ½ cup (45 g) shredded sweetened coconut
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon, optional
  • Pinch of salt

Instructions

  1. Prepare the fruit: Mash the bananas until mostly smooth, leaving a few small pieces for texture.
  2. Combine ingredients: Place the bananas, crushed pineapple and juice, sugar, coconut, lemon juice, cinnamon, and salt in a large heavy-bottomed saucepan.
  3. Cook: Bring the mixture to a gentle boil over medium heat, stirring frequently.
  4. Simmer: Reduce the heat to low and cook for 25–35 minutes, stirring often, until the mixture is thick and glossy.
  5. Add vanilla: Stir in the vanilla during the final 2–3 minutes of cooking.
  6. Cool: Remove from the heat and allow the spread to cool. It will thicken further as it cools.
  7. Store: Transfer to clean airtight containers and refrigerate.
